From the Kitchen: Arroz con Leche and Flan

Arroz con Leche 
1 1/2 cups White Rice 
2 1/2 cups of Milk 
1 1/2 cup of Sugar
2 Cinnamon Sticks 
Zest of an Orange 
Pinch of Salt 

In a heavy-bottomed sauce pan bring Rice and Milk to a boil, then lower heat add Sugar, Orange Zest, Cinnamon, and Salt and let simmer for 20- 25 minutes stirring often to avoid sticking.

Cook until thickened and rice is throughly softened. Serve warm or cold.  


Flan 
6 Eggs
2 cups of milk
1 1/2 cup of Sugar 
1 Tbsp Pure Vanilla Extract 
Pinch of Salt 
6-8 Ramekins or 1 Shallow Ceramic Baking Dish 

With an electric whisk, combine eggs, milk, 1 cup of sugar (reserve remaining 1/2 cup) and vanilla. Whisk on medium/high speed until you have a homogenous mixture. 

In a sauce pan over low/medium heat add 1/2 cup of sugar and stir continually until melted into caramel. Takes about 10 minutes and be cautious not to burn the sugar. 

Once caramel is ready immediately pour into baking dish with a swirling motion to cover the bottom. Pour in egg and milk mixture and place dish over a bain de marie.

Bake at 350 degrees Fahrenheit for 45mins-1 hour or until a toothpick comes out clean. Then, refrigerate for 1 hour to set.
